Avocado Toast Pesto Mushrooms

Ingredients

  • 200g of chestnut mushrooms- sliced

  • A drizzle of olive oil

  • A dash of soy sauce

  • 1 ripe avocado

  • A squeeze of lime

  • Salt & pepper to taste

For the pesto:

  • 2 tbsp of cashews

  • 20-30g of basil leaves ( I used some which I had in the freezer)

  • 1 tsp of nutritional yeast

  • 1 garlic clove

  • The juice of 1/2 lemon

  • 2-3 tbsp of good quality extra virgin olive oil

  • Salt to taste

Ingredients

  1. Add a drizzle of oil to a frying pan. Once hit add in the mushrooms and a pinch of salt. Cook on a medium heat until the mushrooms have shrunk in size and the liquid has evaporated, about 10 minutes. drizzle with some soy sauce and cook for another minute.

  2. Mash the avocado and mix with lime juice, salt and pepper.

  3. Make the pesto: add all the ingredients into a food processor or use a hand blender and blitz until fairly smooth and creamy. Add more oil if needed.

  4. Toast you bread (I love sourdough). Spread the mash avocado on top, add the mushrooms and finally drizzle the pesto. I also like to add a crack of black pepper, chilli flakes and some extra chopped basil leaves.
