Family Greek Pita Pizzas
Ingredients:
Mini pitas or regular sized pitas
Hummus
English or Persian cucumber
Cherry tomatoes
Red onion
Kalamata Olives
Feta cheese
Dried oregano and garlic powder
Red wine vinegar and olive oil
Instructions:
Chop the cucumber, tomatoes, red onion and kalamata olives and add them to a large mixing bowl. Pour the olive oil and red wine vinegar on top of the veggies and sprinkle on the dried oregano, garlic powder, salt and pepper. Toss everything together, then set it aside.
While you make the salad, turn your oven on to broil. Brush or drizzle the tops of the pita bread with olive oil, then sprinkle on dried oregano, garlic powder, salt and pepper. I didn’t measure and of the spices for the pitas just sprinkle on however much you’d like. Broil the pita bread on a baking sheet until it’s golden brown and be sure to keep an eye on it so it doesn’t burn.
Once the pitas are golden brown and toasted, remove them from the oven and spread hummus on top of each one. Put some of the Greek salad on top of the hummus. Finish the pizzas by adding crumbled feta and an extra sprinkle of dried oregano.
I generally use traditional hummus when I make these pizzas and often buy prepared hummus at the grocery store. There’s a lot of great options for prepared hummus these days. However, if you want to make homemade hummus and/or use a flavored version feel free to do so. Roasted Red Pepper Hummus or Roasted Garlic Hummus would be delicious alternatives.
